How does Czech beer taste different than beers from other parts of the world?
This may be a silly question, but do beers from different countries have a consistently different taste. For example, are German beers more bitter than Czech beers? Are American lagers sweeter than their German counterparts? etc. Basically I want to know if you can distinguish the taste of beer based on its nationality. I'm thinking about this as I drink a Pilsner Urquell, so if you have info about it that would be great too. Thanks!
The differences from one beer to another have to do with the types of ingredients used and methods employed in its production. The malt, hops, water and especially yeast all have profound influences on how a beer will be perceived. There is a world of variety of malts, hops, and yeast to choose from while developing a beer's profile. The flavor perceptions of the final beer are also dependent upon the brewing methods employed during its production. So the final flavor of the beer comes down to a predetermined manipulation of these ingredients.
There is no greater influence on beer than water and yeast employed in its production. To further qualify that statement we must also consider that brewing methods also have a profound impact on the final product.
Where water is concerned, it has been found that the low mineral (soft) with relatively higher inorganic salts content of the region around the Czech Republic, is responsible for the softer rounder and drier composition and sensory experience of Pilsner beer (Pivo). This has to do in part to the way chemical reactions occur in the mash, such as enzyme activity. Also it is that salts present a rounder-smoother sensory experience in foods which, of course includes beer. But the way the beer is processed is another consideration to the flavor of Czech beer.
In times past, the barley was not fully developed in the malting process. In fact, barley was not malted at all in the earliest times of brewing. What had developed was a process in brewing of time and heat controlled ‘rests’ that allowed [mysteriously at the time] certain reactions to occur. Some of these reactions acidified the malt, converted large weight proteins to smaller units, and starch conversion among others. The heating of a small sample of the mash and its return to the main body mash would create condition in which these actives occurred. The process is known a decoction mashing and is the defining methods used in brewing lager beer. Today however, the barley on the market has been engineered possess lower protein fractions and other parameters, making decoction methods which are laborsome and expensive not necessary. As far as growing seasons and terroir (soil) concerns which is accurately stated above, barley is carefully monitored and manipulated to be within a certain prescribed chemical analyses. The maltster and the brewer may further manipulate what has not been meet in the fields. As far as hops are concerned they prefer a low nutrient loamy-sand and very moist soil. Although little to no fertilization is applied in the growing of hops. Other than this, hops are/is not concerned with soil maintenance but rather by degree of sun exposure, moisture, and trellising techniques. Yeast is important and in fact is often overlooked in its importance to the final product. Yeast may have genetic variables that allows its utilization of sugar substrates and other nutrients that influence its activity. Certain yeast produces phenols while others are clean. Some yeast produce diacetyl (enemy of clean lagers such as Czech pils]. In the end the type of yeast employed and the environmental conditions of its fermentation influence what chemicals are produced or reduced and which in turn has a profound influence on the beers flavor profile.
The important thing to know is that the water and methods influence the ingredients used in brewing beer. Beer from any part of the world is today a matter of local and national preference. No matter the beer desired that parameters of brewing conditions are a matter a brewer manipulation and not local resources/ingredients. The most popular beers across all borders today are the lighter styles. These include American Lager, Bitter, Pale Ales/IPA, and Pilsner styles. Each of these are produced for local demand on all continents {all?]. We can speak in generalities about what country has sweeter or more bitter beers but tradition today is plagued by the ability of world travel and trade. I feel that German Lagers are more malty than the Czech Lagers and that American Lagers are sweeter than European. Ah, give or take a bit.
