What are maximum and minmum temperatures that you would need to ferment beer?
I am doing a project to facilitate brewing fermentation and want to know what teh coldest and hottest temperature you would need when storing a wide range of beers to ferment.
Most lagers ferment in the low 50F range, whereas most ales are in the upper 70F range. You would not need to go to 80F or above, and you would not need to go below about 45F. Since you mentioned storing, most beers are best stored in the 45-55F range. Keeping them refrigerated is not that good for them, as the refrigerator dehydrates items -- such as corks or swingtop bottles (possibly even the wax under a metal cap). Also, bottle conditioned beers have live yeast in them which would not work when refrigerated. So, my advice is to look a little bit deeper into what the fermentation conditions are for various strains of yeast (there are numerous), but they should all fall in to the 50-80F range, with lager yeast working better cooler than ale yeast.
