for instance: last night we went out to dinner and he literally drank a whole bottle of wine! he didn't show any signs of being drunk and drove us home safely but then he went to el bee's and probably had a few margaritas then his friend came over to have wine!
how can he drink this much with out getting drunk?

oh, and what I described from last night is not unusual. I'm not saying that he's an alcoholic, but it scares me!
Since your mother won't listen to your concerns, ask another adult you trust, and whose opinion matters to you. If he drinks like this every day, he's a functional drunk. Meaning he can drink like a fish and still function normally.
Eventually, yes, his liver and kidneys will fail. If he's put on a waiting list for a liver transplant, they will ask about alcohol consumption. Once a new liver is implanted, there is to be absolutely no drinking what so ever. They do periodic, random blood tests. If they find alcohol in his system, he may be told that he can no longer take the medications he'll be on, at that point, to keep his body from rejecting his liver.
Confronting him more than likely won't do you any good. He'll just deny that he's got a problem. You also can't force him to go to AA meetings. At this point, he can probably still ground you for what ever reason he wants. (I'm a mom, I ground my kids too... just because I can.)
Responsible drinking means knowing your limits and stopping well before you've reached those limits. One or two drinks per night should be the max. Maybe three, if you're a guy.
Maybe you can learn from this, so you won't make the same mistakes in the future. I swore I would never let my kids see me drunk, and that I would not live my life out of a bottle. I think I've done pretty well with that.
