Can I drink wine when it is not finished fermenting?
I make my own wine. When wine is still not finished fermenting can I drink it, or do I have to wait until it finishes fermenting?
You can drink it at any time you want. If you take it out and drink it while it is fermenting it is called drinking it short. I actively encourage you to do so, just so that you can learn the stages of brewing. Keep in mind the more you drink the less you will have to fit in the carboy and later to bottle.
It does not taste gross. In fact I have many friends who prefer it this way. It will taste like a cross between semi sweet fruit juice and alcohol. About the same as any of the alcopops. It is in fact what is in there, half brewed juice. It also has active yeast in it.
There is nothing wrong with active yeast. You can eat it. In fact it has been used for yeast as a nutritional supplement.
I make a short meed that site only in the primary fermentor (its the same one I use to bottle with, and has a spiggot on the bottom). I brew it for 2-4 weeks, then let people drink what is in it, except the bottom gallon. Then I mix up a new batch and throw it in the fermentor. No extra yeast, just juice, fruit and water. Then wait 2 weeks and start again. You can keep this going, for about 7 or 8 times until the yeast start to mutate. Then clean it, mix a new batch, and new yeast and repeat.
