Vegetarian black bean chili recipe?
So, I'd like to make some black bean chili that I can freeze for later use to eat and what not. I need an easy recipe for it, vegetarian black bean chili. I have basically what I need; Onions, garlic, black beans, I have tomato paste and sauce, I have one can of crushed tomato/es, black beans that I have cooked for the most part, I froze them in cup increments, any ideas of how I can make it? I also have green and red peppers. Also frozen corn and other vegetables if needed. Thanks1 :]

Black Bean Chili With Toasted Spice Seasoning

3 Cups Dried black beans -- soaked
8 Cups Water
2 Each Jalapeno peppers -- minced
1 1/2 Tablespoons Grated ginger
1 Each Bay leaf
1 Cup Chopped cilantro
1 Teaspoon Cumin seeds
2 Tablespoons Chili powder
1/2 Tablespoon Oregano
1/2 Cup Sun-dried tomatoes
4 Cups Peeled -- chopped plum tomatos
1/3 Cup Uncooked bulgur wheat
1/2 Cup Boiling water
Salt & pepper -- --------SEASONING---
1/2 Tablespoon Mustard seeds
1/2 Teaspoon Fennel seeds
Drain beans. Place in a large pot & add 8 c water. Bring to a boil. Add peppers, ginger, bay leaf & 1/2 c cilantro. Cover & simmer for 11/2 to 2 hours. Remove from heat & discard bay leaf. Place cumin seeds in a pot & toast. When seeds darken, add chili powder, oregano, tomatoes. Stir well & bring mixture to a boil. Reduce heat & simmer for 30 minutes. In another bowl, combine bulgur with boiling water, cover & let sit for 10 minutes. When beans are cooked, remove 1 c & puree it with some cooking liquid. Combine puree with remaining beans. Stir in tomato mixture & bulgur.Season & simmer for 10 minutes. Place mustard seeds in a pot over medium heat, cover & cook till seeds start to pop. Add fennel seeds & cover. Cook till popping stops & fennel darkens. Pour over chili. Add remaining cilantro & drizzle with olive oil.

1/2 c Quinoa; rinsed
2 c Black bean flakes
1 1/2 c -Boiling water
2 ts Chili powder
1 ts Ground cumin
1/2 c Fresh cilantro, chopped
2 Green onions; chopped
1/2 c Red bell pepper, chopped
1/2 c Plain bread crumbs
3/4 ts Salt
2 ts Vegetable oil
-----------------------------OPTIONAL GARNISHES-----------------------------
2 c Lettuce; shredded
1 c Grated lo-fat cheddar cheese
-OR cheddar-style soy cheese
1/2 c Nonfat sour cream
1 c Bottled salsa
Avocado; diced
Ripe olives, sliced
Green onions; chopped
Bring 1 cup water to a boil in a small saucepan. Add quinoa, cover and simmer 15 minutes.
Place black bean flakes in a medium-sized bowl. Stir in boiling water. Cover and let stand 5 minutes.
Combine 1/2 cup cooked quinoa with black beans, chili powder, cumin, cilantro, green onions, red bell pepper, bread crumbs and salt. Mix well.Lightly flour hands and divide mixture into six equal balls. Flatten each ball into a 1/4-inch-thick cake. Heat oil in a nonstick skillet. Cook each bean cake about 2 minutes each side. Serve topped with lettuce, cheese, nonfat sour cream, salsa and other garnishes, as desired.

1 c Onion; chopped
1 tb Margarine or butter
4 c Water
1 Bouillon cube, beef
12 oz Ham, cooked lean
2 Bay leaves
1/2 ts Thyme, dried leaf
1/2 ts Oregano, dried leaf
1/2 ts Salt
1 Pepper, dried whole red
1 c Pepper, green bell; chopped
1/3 c Dark rum (optional)
1 c Sour cream (optional) Sort and soak beans overnight; drain and discard soak water. In a 4-quart pot, saute onion in butter or marg until tender but not browned. Add soaked beans, 4 cups water, bouillon cube, ham (cut into 4-6 chunks), bay leaves, thyme, oregano, salt & red pepper. Bring to boil; reduce heat. Cover and simmer until beans are tender, 1 to 1-1/2 hour. Remove 1 c. beans from
