Ale Beer Porter

What affect does a very thin mash have on my beer?
I created a very thin mash when not paying attention. I was brewing a Brown Ale when I hit the hose to my sparge tank witch dumped 4-6 quarts of sparge liquor to the mash. If I just "dumped malt" into the mash it will be sort of an Imperial BA, something very close to a Porter.
Do it now?
Wait?
Do not add any grain?
What affect does a very thin mash have on my beer?
A thinner mash does not negatively affect the enzymatic activity of barley. What a thin mash does is favor diastatic activity over proteolytic enzyme activity.
Recall that the enzymes we are concerned about in modern highly modified barley is the alpha and beta amylases. These enzymes work to degrade endosperm starches to simpler sugars. The processes of starch reduction by enzymes are liquification and saccharification. Liquification and saccharification work together in the mash to produce sugars which will later be fermented by yeast. But barley also contains protein-degrading enzymes.
In the past and sometimes today proteolytic enzymes are activated to degrade the protein in barley. Today, this is a much less required step in the brewers’ mash due to malts with a lower protein fraction . Yet, malt is not protein free and it contains a variety of proteins, both catalytic and substrate sources. What a brewer would do is conduct a protein rest allowing the activated enzymes to “breakdown” long chain branched proteins to much smaller units. Some of these were basic protein units called amino acids, which the yeast requires for its cell membranes and bio-activities. The importance of proteins relates to yeast health and quality of its fermentation (attenuation) activity. The proteolytic enzymes are most active at low and mid temperature ranges. {below about 142F} If you did not employ these lower temperatures you have nothing to be concerned about. In addition, I assume you are using a highly modified malt and not an under modified or 6-row variety so proteins are not a concern for you (?). This brings us back to relative thickness of your mash.
Generally, a “thicker” mash favors proteolytic activity and “thinner” mashes favor diastatic activity. Your thinner mash is likely to produce more fermentable or dextrinous wort depending on the mash temperature you employed for this mashing run.
Results depending upon your mash temperature?:
A thinner ale with a slightly higher ABV than target?
A slightly more bodied ale with a lower ABV than target?
At the time of brewing I would have done nothing and just have waited it out. You can always make adjunct adjustments in the kettle to increase your specific gravity if needed.
Pojďme na pivo.
Na zdravi -Cheers
Veselé svátky - Happy Holidays
Uspesny novy rok -Successful new year

Pale Ale $79.66 High Quality Content by WIKIPEDIA articles Pale ale, a variety of beer which uses a top fermenting yeast and predominantly pale malt, is one of the worlds major beer styles.Pale ale was a term used for beers made from malt dried with coke. Coke had been first used for roasting malt in 1642, but it wasnt until around 1703 that the term pale ale was first used. By 1784, advertisements were appearing in the Calcutta Gazette for light and excellent pale ale. By 1830, the expressions bitter and pale ale were synonymous. Breweries would tend to designate beers as pale ale, though customers would commonly refer to the same beers as bitter. It is thought that customers used the term bitter to differentiate these pale ales from other less noticeably hopped beers such as porter and mild. Old Ale $74.88 Please note that the content of this book primarily consists of articles available from Wikipedia or other free sources online. Old ale is a term commonly applied to dark, malty beers in England, generally above 5 abv, often also called Winter Warmers; also to dark ales of any strength in Australia. Sometimes associated with stock ale or, archaically, keeping ale, in which the beer is held at the brewery. Historically, old ales served as a complement to mild ales, and in pubs of the era typically the landlord would serve the customer a blend of the sharper stock ale with the fruitier, sweeter mild ale to the customers taste. In London especially, the aged ale would take on a sour, lactic acid note from the continuing fermentation in the cask caused by contamination with natural lactic bacteria. Because of the time required for the aging process, some investors would buy mild ale from brewers, age it into old ale, and sell it at the higher price. Eventually, brewers began to keep some beer behind at the brewery, age it themselves and sell it to the pubs. Author: Surhone, Lambert M./ Tennoe, Mariam T./ Henssonow, Susan F.
